This coffee is from the Sopade Cooperative in the Democratic Republic of Congo, brought to market through the inaugural Best of Congo auction designed to spotlight exceptional Congolese lots. The coffee underwent a unique post-harvest process: fermented out of water for 12 hours, then fermented underwater for 24 hours, before being fully washed of its mucilage and dried. The result is an intensely sweet cup with prominent berry flavors and a weightier body than typically expected from a fully washed coffee.
