This single origin coffee comes from two farms, Maputo and Hakuna Matata, located in La Perla region of Pichincha province, Ecuador at 1350 meters elevation. The farms are owned and operated by Henry and Verena Gaibor who control their own wet-milling and drying. The coffee is Typica variety, washed processed. The region features a cool climate with misty afternoon clouds providing high humidity and an average temperature of 18.3°C, with warm days and cool nights ideal for coffee production. The volcanic soil and rose farms in the area inform the terroir. Flavor profile includes herbal notes, cranberry juice, and sugarcane.

Manta Ray Coffee Roasters
After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
