About This Coffee

An anaerobic natural coffee from El Martillo farm in El Salvador, produced by the Salaverria Family. The farm covers 19.5 hectares at approximately 1700 masl near the Santa Ana volcano. Cultivars include a blend of Bourbon and Hibrido de San Francisco — a local hybrid combining the dwarf Bourbon Pacas with traditional Bourbon Elite. Cherries were selectively picked for full ripeness, then placed in fermentation tanks for 80 hours before being dried on patios.
