This coffee was processed at the SNAP-owned Danche Washing Station in Worka Chelbesa, a kebele in the far south of Gedeo region, traditionally categorized as Yirgacheffe grown coffee. The coffee comes from over 600 smallholder farmers who grow coffee on plots ranging from 0.5 to 2 hectares, at altitudes between 1925 and 2300 meters above sea level. Ripe cherries were depulped and fermented underwater for 24-36 hours to remove all mucilage, then thoroughly washed with clean spring water and separated twice by density and floating. The coffee was dried on raised beds until reaching desired humidity. Sourced through Ally Coffee.

Founded in 2012 by Jens Crabbe, MOK began as a small roastery and bar in Leuven before expanding to Brussels. Jens, a two time former Belgian Cup Tasters Champion, is driven by a desire to explore the full potential of coffee flavor.
