This coffee is a Gesha variety from Finca Deborah in Volcan, Panama, grown at 1925 meters altitude. Produced by Jamison Savage, the farm is shrouded in rainforest cloud coverage for much of the year with extreme elevation and reduced temperatures reaching 10°C that slow the metabolism of the trees and push more sugars into the cherries. The processing method is Nitrogen Maceration Natural, where perfectly ripe Gesha cherries reading 21-24 on BRIX meter are carefully selected and deposited inside hermetically sealed tanks for an extended period in excess of 50 hours with constant monitoring of pH and temperature. After nitrogen infusion, the coffee is placed on shaded, raised African beds. The flavor profile features blood orange, black cherry, violet, and cacao nibs. This is an Omni roast.
