About This Coffee

This coffee is a Gesha variety from Finca Deborah in the Volcan region of Panama, grown at 1925 meters altitude. Produced by Jamison Savage, the farm is shrouded in rainforest cloud coverage for much of the year, with extreme elevation and cold temperatures reaching 10°C that slow the metabolism of the trees and allow more sugars to be pushed into the cherries. The coffee undergoes an Argon Maceration Washed process, where ripe Gesha cherries are fermented for 50 hours in argon-infused stainless steel tanks with careful temperature and pH monitoring. After reaching peak development, the cherries are washed and dried on a specialized three-tiered bed system on shaded, raised African beds. Flavor notes include mandarin, bergamot, and orange blossom.
