This coffee is a Sidra variety from Finca La Hermosa in Guatemala, located on the slopes of the Acatenango volcano in the Chimaltenango region at 1,600 meters altitude. The farm was founded in 2010 by Max Pérez and is grown on mineral-rich volcanic soil. The coffee is processed using a honey method, where cherries are manually harvested at peak ripeness, partially depulped leaving some pulp and mucilage on the beans, then dried slowly on sunny patios with regular turning to ensure uniformity and prevent excessive fermentation. This processing method helps retain the fruit's natural sugars and showcases the Sidra variety's aromatic elegance and complexity.

What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
