This coffee comes from the Nyaruguru region in southern Rwanda, produced by the Ikizere group of 61 women, all single mothers. Grown at an altitude of about 1850 meters, it is made from the Bourbon Rouge variety. Cherries are picked at full ripeness and sorted by flotation, then by hand. They are stored in plastic bags for 12 hours before being fully depulped by hand. The coffee is then passed under water to remove remaining mucilage and immersed in water for 8 to 12 hours. Finally, it is dried on raised beds for 30 to 40 days. Processed at the Fugi washing station under the supervision of Emmanuel Rusatira of Baho Coffee. Slightly tangy, offering a delicate espresso or complex filter.

What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
