About This Coffee

This coffee is a Sidra variety from Finca Las Asturias, a 5-hectare farm in Kennedy, San Agustin, Huila, Colombia, at 1700 meters altitude. The farm is owned and operated by producer Augusto Ortega. The coffee undergoes gentle washed processing, where cherries are picked at peak ripeness, fermented in cherry overnight, de-pulped, dry fermented for 32 hours, rinsed, and dried on raised shaded beds for 20-22 days. The cup features notes of raspberry, mango, and honey with fresh white florals in the aroma and a wonderful acidity that becomes more pronounced as the coffee cools.
