Single origin coffee from Java Frinsa Estate in West Java, Indonesia, grown at 1300-1500 meters elevation. The varieties include Borbor, Andungsan, P88, and Sigarar Utang. Processed using the Edun-Edun method, cherries undergo 3 days of anaerobic fermentation in barrels inoculated with lactic acid bacteria before being dried as whole cherries on tarpaulins. This anaerobic natural process produces bold funk and wildly expressive flavors with tasting notes of fruit wine gums and molasses. The name "Edun" means "crazy" in Bahasa, signaling the coffee's intense, funky character.
