This coffee is a Tabi variety from Finca Las Flores in Acevedo, Huila, Colombia, grown at 1,750 meters altitude. It is a washed coffee produced by Vergara Brothers. The Tabi variety is a hybrid of Typica, Bourbon, and Timor Hybrid, developed in Colombia in 2002 to combat leaf rust. The coffee undergoes an extended fermentation process: 12 hours of anaerobic fermentation in sealed bags, followed by 24 hours of oxidation in open tanks, then gentle depulping, and finally 48 hours of anaerobic fermentation with mucilage. This results in a full-bodied coffee with creamy notes of raspberry, dark chocolate, and honey, representing a fruit-forward berry ensemble profile.
