This coffee is produced by Néstor Lasso at El Diviso farm in Pitalito, Huila, Colombia, at 1,750 meters above sea level. It is a Sidra variety processed with a 48-hour method. The coffee features juicy fruity notes of peaches in syrup and vanilla, with a lactic yoghurt-like base and background notes of strawberries and cream. It has a long, fruit-forward finish with lively, juicy acidity and a creamy body.

Ineffable Coffee Roasters

Three friends who had lived and worked in Cape Town, Istanbul, and the UK returned to Seville in 2013 craving ethical, quality driven coffee and found none. Jose, Omar, and Alejandro founded Ineffable in 2017, and by 2024 they had won Best Specialty Coffee Roaster in Spain at the Barcelona Coffee Awards, selected from among 44 roasters and over 80 coffee brands. The name comes from the Latin ineffabilis: too powerful to express in words. They roast weekly from their base near Seville, sourcing small micro lots with complete traceability and a stated commitment to foregrounding the work of the farmer. The team brings over a decade of combined experience as baristas, roasters, and trainers from specialty scenes around the world. Ineffable ships across Spain and into Europe, and serves hundreds of homes through a daily subscription service.
