A decaffeinated Pink Bourbon from Finca Las Flores in Acevedo, Huila, Colombia, produced by Jhoan Vergara. Grown at approximately 1,600–1,750 masl, this coffee undergoes a multi-stage anaerobic natural process before being decaffeinated using the sugarcane (EA) method. The processing includes anaerobic fermentation in cherries (~36 hours), a short oxidation phase, and a second anaerobic fermentation after depulping. Tasting notes include apricot, white grapes, and violet, with an emphasis on floral aromatics, refined acidity, and layered sweetness.
