A decaffeinated coffee from selected smallholder farms in the Popayán region of Colombia. A blend of Castillo, Catimor Typica, and Caturra varieties. Growers deliver their harvest in dry parchment, milled in Popayán before transport to Caldas for decaffeination via the Colombian sugar-cane method (ethyl acetate derived from fermented sugar cane). The process preserves the beans' original flavour and structure. Tasting notes include caramel, cacao, and molasses, with balanced character and clean sweetness.
