Red Honey

About This Coffee

This coffee is from the Sidama region of Ethiopia, grown by smallholder farmers at Faficho Bombe between 2100 and 2200 meters altitude. It features heirloom and landrace varieties processed using the Red Honey method at Basha Bekele's Bombe washing station. Approximately 500 local farmers contribute ripe cherries which are floated for selection. The Red Honey process involves leaving generous mucilage on the parchment which dries slowly on raised beds under shade, allowing fruit sugars to caramelize. The cup features rose petal and cherry jelly aromas with pomegranate acidity and cocoa notes, offering a balance between delicacy and intensity with layered sweetness and woven floral characteristics.
