This single origin coffee comes from the Mushonyi coffee central washing station in Rwanda's Rutsiro region, near Lake Kivu. The coffee is grown at 1200-1820 meters above sea level in rich volcanic soil with steady rainfall and mild climate. Supported by over 1200 smallholder farmers, this Bourbon varietal undergoes a washed process. Cherries are hand-sorted, floated for density selection, fermented in tanks for 24 hours, thoroughly washed to remove mucilage, and dried on raised beds until reaching 10.8% moisture content. The coffee features flavor notes of red plum, dates, and brown sugar.

Manta Ray Coffee Roasters
After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
