This is a single origin coffee from the Rutsiro region of Rwanda, grown at elevations between 1200-1820 meters above sea level. The coffee is a Bourbon varietal processed using the washed method. It comes from the Mushonyi coffee central washing station (CWS), which is supported by over 1200 smallholder farmers. The region surrounding Lake Kivu is known for its rich volcanic soil, steady rainfall, and mild climate. The cherries are hand-sorted, floated to separate denser beans, fermented for 24 hours, washed to remove mucilage, and dried on raised beds to 10.8% moisture content. The coffee offers flavor notes of red plum, dates, and brown sugar.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
