San Sebastian is a Colombian coffee grown by a local producer group (Comunidad de Inzá) in the Tierradentro region of Cauca, at altitudes of 1700–2000 meters. The varieties are Caturra and Castillo, processed using a washed method with natural fermentation and sun-drying. The volcanic soils and slow cherry maturation contribute to complex aromas. Tasting notes include milk chocolate, maple syrup, cashew, and almond. Imported by Cofinet and roasted as an espresso by The Beans On Fire in their collaborative Parisian workshop.

Operating from two Paris locations at 7 Rue du Général Blaise and 61 Rue des Trois Frères, the roastery functions as both a production hub and an incubator for emerging talent. Their philosophy describes coffee as something "played like jazz," emphasizing improvisation, collaboration, and individual expression within a shared framework. Training and education programs further extend this inclusive vision, making The Beans on Fire a vital institution in the Parisian specialty coffee ecosystem.
