Santa Irene is from Finca Santa Irene in the Cobán region of Guatemala (1740 masl). This lot is primarily Catuaí and was processed using a washed method involving pulping, concrete fermentation, demucilager demucilaging, washing channels and drying on raised beds. On the cupping table it shows pear, macadamia and rooibos flavor notes. It is offered roasted for both filter and espresso preparations.
