Tres De Mayo is an espresso roast from the Tres De Mayo farm in the San Ignacio region of Cajamarca, Peru. The lot is a blend of Typica and Caturra varieties, selectively hand-harvested, pulped, briefly fermented, fully washed, and dried on raised African beds for 15–20 days. The roast is tailored for espresso, with bright notes of green apple and cherry and a clean, zippy character.
