The lot was fermented 48 hours to soften the cherry, pulped, fermented a further 24 hours, washed, then dried 14–21 days with regular turning. Varietal: Geisha. Flavor profile: ripe cherry, honey, and floral notes with delicate acidity and refined sweetness.
