About This Coffee

This coffee originates from the Mt Elgon region in East Uganda, grown by cooperative farmers around Zebigi and produced by The Coffee Gardens at altitudes of 1,800–2,200 meters above sea level. The coffee combines three Arabica varieties: SL-14, SL-28, and Nyasaland. It is processed using dry fermentation (washed/dry fermentation), where the beans ferment without added water after depulping, enhancing sweetness and complexity while retaining bright acidity. Flavor notes include chamomile tea, butter cookies, and pomelo.

RepublicThis Ostrava based family roastery was founded in 2017 by husband and wife duo Petr and Marie, who previously worked as baristas at Berlin's Five Elephant cafe. What started as a small family business with dad roasting and mom tasting while the kids watched has grown to a team of over 10 people with a Prague showroom opening in Bubenč. They roast on an American made five pound Diedrich IR-5 roaster with quality as their number one priority, offering regularly rotating harvests from around the world. Their Mothership espresso blend has become beloved by baristas and home enthusiasts for its full creamy body and milk chocolate flavor.
