This coffee is from Fazenda Santa Clara in Oliveira, Minas Gerais, Brazil, produced by Paulo Afonso de Resende. The cherries are mechanically harvested at optimal ripeness and undergo controlled anaerobic fermentation for 72 hours in closed tanks. The coffee is dried on suspended beds to 16% moisture, stored for 15 days, then sun-dried to 11.5%. This natural processed coffee scored 88 points and features a balanced profile with notes of milk chocolate, toasted almonds, brown sugar, cherries, lemon peel, mint, and white chocolate. It has medium acidity with a long, velvety finish.
