Brazil Yellow Bourbon is an Arabica variety originating from the region south of the border with Minas Gerais, in the state of São Paulo, cultivated at altitudes between 1,100 and 1,500 metres above sea level. The ripe yellow cherries are hand-picked, washed on the same day, and sun-dried before being pulped in a water channel, then dried to approximately 11% moisture content. The coffee features a velvety smooth texture with a sweet finish of dark chocolate and brown sugar, complemented by roasted nuts and vanilla.
