Pink Bourbon from Carlos Guamanga's farm, El Recuerdo, located in Bruselas, Huila, Colombia. The farm spans 3 hectares combined with an annex called La Esperanza, with half dedicated to coffee and the other half to food crops and forest. Washed processing typical of the region, utilizing both whole-cherry and depulped fermentations in sealed barrels. This results in a crisp and clean profile with sweet and savory guava and blackberry fruitiness, caramelized cantaloupe, panela, and black tea notes. The drying beds are equipped with Arduino boards and fans connected to temperature and relative humidity sensors for precision processing.
