This coffee is from El Vergel Estate in Tolima, Colombia, grown at 1460 meters altitude. It features the Yellow Bourbon variety processed using an anaerobic natural method. The beans undergo a 48-hour fermentation followed by eight days of sun drying in mechanical silos, then rest for 35 days in Grain Pro bags before milling. The cup profile presents overripe strawberries, candied tangerine peel, and canned yellow peaches. El Vergel Estate is managed by the Bayter family, who began coffee cultivation in 2006 and adopted experimental fermentation processes in 2018. The estate is known for innovative processing methods including Koji fermentation.
