This coffee is from the Huila region of Colombia, grown at 1900 meters above sea level. The varieties are Castillo and Caturra, sourced from various producers whose farms average 3 hectares in size. The coffee undergoes a 12-hour aerobic fermentation in cherry, followed by an innovative process at Los Patios facility where commercial cherry concentrate and a proprietary solution are added to the de-pulped coffee. This fermentation and absorption phase lasts 2 days, after which the coffee is dried in mechanical silos for 8 days. The process aims to elevate Castillo's traditional robust profile with intense cherry, vanilla, and dark chocolate notes. The trader is The Coffee Quest.
