This coffee is a Pink Bourbon variety from Colombia, produced by Diofanor Ruiz at La Divisa at 1800 meters above sea level. The cherries are selectively harvested at peak ripeness, hand-sorted and floated to remove defects. The coffee undergoes fully washed processing with a 30-hour underwater anaerobic fermentation following the Cofinet protocol. This controlled fermentation breaks down sugars and organic acids to develop a sweet and bright profile. Flavor notes include caramel, nectarine, and overripe strawberry. Roasted for filter.
