About This Coffee

This single origin coffee from the Las Flores farm in Huila, Colombia is produced by the Vergara family at an altitude of 1730-1750 meters. The coffee features the Tabi variety, a hybrid of Bourbon, Typica, and Timor HdT 1343 developed by Cenicafe for rust resistance. The processing involves a thermal shock washed method where semi-ripe cherries are floated, washed with hypochlorite, oxidized for 48 hours, depulped, fermented for 36 hours, and then subjected to thermal shock with hot water at 50°C for 36 hours before drying over 10 days. Flavor notes include floral, blackcurrant, raspberry, and lime. This coffee is roasted as a filter roast only.
