About This Coffee

This is a decaffeinated Colombian coffee using an innovative EA (ethyl acetate) decaffeination process. The caffeine is removed using ethyl acetate, a natural solvent derived from sugarcane fermentation, which binds to chlorogenic acid salts in the coffee. Green beans are soaked in the ethyl acetate solution and then steamed to remove all traces of the solvent, leaving only 0.01-0.03% of the natural caffeine content. The flavor notes include graham cracker, cocoa, caramel, and citrus.
