A single estate coffee from Finca Ojo de Agua (Agrícola San Agustín), a 5.5-hectare family farm in the Apaneca-Ilamatepec mountains, El Salvador, grown at 1,350 meters altitude. The Bourbon variety cherries are selectively hand-picked and undergo 192 hours of controlled anaerobic natural fermentation with culture starters, followed by slow drying on raised beds for 25–30 days, and a minimum 60-day rest period before further processing. Flavor notes include apple, cinnamon, chocolate, and nuttiness.
