This naturally processed Ethiopian coffee is from the Guji region at 1800-2200 meters above sea level. Produced by Gizaw Alemayehu at the Gizaw & Frehiwot Washing Station, the coffee features mixed heirloom varietals. The cherries are hand-picked, floated for defects, graded, and dried on raised African beds for 20-30 days, with shading between 12-3pm to protect from excessive sun exposure. Drying is complete at 11.5% moisture content. The cup profile includes floral notes, black tea, blueberry, grape, black plums, blackberries, and dark chocolate, offering a sweet and complex character. This is an espresso roast.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
