Ethiopia Deri Fahmi is a naturally processed single origin coffee from the Guji region. The coffee is harvested from the village of Deri at elevations between 1900-2200 meters. It is a blend of mixed heirloom Ethiopian varietals. The cherries undergo special prep sorting above Grade 1 level to select only the ripest cherries, which are then rinsed and dried on raised beds for 8-25 days. This coffee features floral notes with French earl grey tea and blueberry flavor characteristics.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
