About This Coffee

This coffee comes from Alemayehu Hillo, a dedicated farmer in the Yirgacheffe region of Ethiopia. He produces around 12 metric tons of coffee annually, with 9.6 tons prepared as specialty coffee for export. The ripe cherries are carefully handpicked and dried on 120 raised beds, turned six times a day for even drying. The drying process takes 18-21 days, ensuring optimal moisture levels. The coffee is processed using the natural method with mixed heirloom varieties. The cup offers a beautifully balanced profile with candy-like sweetness, rich chocolate notes, soft nougat, and a subtle touch of spices. Roasted for espresso.

Kolonel Coffee Roasters

Kolonel Coffee Roasters started in Antwerp in 2010 when Kobe van Gaveren opened his first coffeebar, bringing his background as a trained cook and sommelier to the world of coffee. The roastery launched in 2016, giving van Gaveren full control over the beans he serves. This unique perspective shapes his approach to roasting, where he meticulously seeks out complex flavors and aromas in small, seasonal batches, creating a sensory experience that is both refined and memorable.
