This coffee is from Ratnagiri Estate in Chikmagalur, India, at 1,340 meters altitude. Produced by Ashok and Divya Patre, this is a Catuaí variety that underwent an experimental washed process. The cherries were fermented in-cherry for 32 hours in stainless-steel bioreactors with mosto, then depulped and fermented again with microbe-enriched mosto for 12 hours. The parchment was slow dried on raised beds for 14 days. The cup profile features red apple, gummy bears, rooibos, and cranberry notes with a sweet, juicy, and silky body. The estate has been producing coffee since 1927 and is known for its science-led processing and biodiversity-driven agriculture.
