This Mexican coffee is produced by Edilsar Ordoñez Mazariegos from the SIPRO cooperative in Amatenango de la Frontera, Chiapas, near the Guatemalan border. Grown at 1500-1550 meters altitude in a mountainous region, the coffee features Catuai, San Ramon, and Villa Sarchi varieties. It undergoes honey processing with a distinctive method: 36 hours resting in cherry, 4 days fermentation, and 21 days drying on raised beds. The flavor profile includes honey, nectar, juicy lemon, mint, herbal notes, vanilla, orange blossom, and bergamot.
