This is a Panama Elida Estate lot from Lamastus Family Estates in Boquete, processed as an Anaerobic Slow Dry Natural from Catuai variety. The coffee is produced at high elevation on the slopes near Volcán Barú and is fermented as whole cherries in a sealed tank for five days, then dried on raised beds for roughly 45–60 days. Roast level is Light, often showing dark fruit character with a sparkling, lively acidity.
