About This Coffee

A single-origin coffee from the El Diamante area in the San José de Lourdes district of northern Peru, grown on a small three-hectare farm by Roger Chilcon Flores at an altitude of 1,900–2,000 meters. The coffee features Caturra and Pache varieties, processed using the washed method with an overnight maceration step to enhance sweetness, followed by 24–36 hours of fermentation and drying in a ventilated greenhouse on wooden platforms. Flavor notes include orange, chamomile tea, and cashew nuts. Suited for all filter brewing methods.

RepublicThis Ostrava based family roastery was founded in 2017 by husband and wife duo Petr and Marie, who previously worked as baristas at Berlin's Five Elephant cafe. What started as a small family business with dad roasting and mom tasting while the kids watched has grown to a team of over 10 people with a Prague showroom opening in Bubenč. They roast on an American made five pound Diedrich IR-5 roaster with quality as their number one priority, offering regularly rotating harvests from around the world. Their Mothership espresso blend has become beloved by baristas and home enthusiasts for its full creamy body and milk chocolate flavor.
