Santuario Sul was founded by Luiz Paulo Dias Pereira in 2015 with a vision to challenge perceptions of Brazilian coffee through experimental processing techniques and wider cultivar selection. This Bourbon lot is from Carmo de Minas, Minas Gerais, Brazil, grown at 1100-1300 meters altitude. The coffee is naturally processed and harvested from July to October. Progressive cultivation practices including shade plantation and innovative drying processes contribute to distinctive flavors. The lot received a quality score of 86 and is beautifully structured with rich texture and plump, well-rounded flavors. Since inception, Santuario Sul has earned recognition in the Brazil Cup of Excellence competition for four consecutive years since 2018, with a second-place finish in 2021.

Their approach is founded on transparency, and since 2018, they have published the "farmgate" price they pay directly to producers. They focus on building partnerships with producers, whom they see as professional colleagues.
