About This Coffee

This Brazilian coffee from Fazenda Um in Minas Gerais is naturally processed and decaffeinated using the 100% chemical-free Swiss Water® Process. The farm is owned by the Um family, with sons Boram (2023 World Barista Champion) and Garam (World Brewers Cup finalist). The Mundo Novo variety grows at 1,300 meters altitude in shady areas with rich volcanic soil using organic farming methods. Cherries are naturally processed, spending 25 days on shaded raised beds and 16 days on patios for slow, even drying. The decaffeination process takes place in Canada using the Swiss Water® Process. Flavor notes include caramel, chocolate, dried dates, and cherry, with moderate acidity and a silky texture.
