A blend of Castillo, Variedad Colombia, and Caturra varieties sourced from smallholders around Tablón de Gómez in Colombia's Nariño region. Farms are situated at altitudes between 1500 and 2000 m.a.s.l., with approximately 90% using shade-grown production. Cherries are hand-sorted, de-pulped, fermented underwater for 24 hours, and washed before being sun-dried on raised beds for 20–25 days. Flavor notes include Amarena cherries, spices, and caramel.
