This decaffeinated coffee comes from Granja Paraíso 92, the farm of Wilton Benitez in Piendamó, Cauca, Colombia, at 1900 MASL. The Red Bourbon variety undergoes anaerobic natural fermentation for 48 hours, followed by drying at 38°C for 48 hours, then a sugarcane decaffeination process that removes caffeine while preserving flavor. The cup offers a clean, silky body with rich sweetness and complex flavors including blueberry jam, bubble gum, red fruits, gentle citrus, and caramel-like depth.
