This coffee is a Geisha variety from Finca Iris Estate in the Volcán region of Panama, grown at 1850–2300 meters altitude. The coffee is processed using CM (Carbonic Maceration) Washed method. Ripe cherries are harvested at 20–22° Brix, hand-sorted twice, and sealed in stainless tanks filled with carbon dioxide for controlled fermentation. After fermentation, the cherries are pulped and washed, then dried for 20–25 days on multi-tiered raised beds inside a temperature- and humidity-controlled drying room. The farm is founded by Jamison Savage, Sasa Sestic, and Elvin Siew, integrating coffee trees naturally within the surrounding forest while cultivating varieties such as Geisha, SL28, and Ethiopian heirlooms. Flavor profile includes candied orange, limoncello, red grapes, and daffodil.
