This coffee comes from Guatemala, specifically the Finca Pampojila farm at 1500 meters above sea level on the southern edge of Lake Atitlán. It is the Caturra variety, naturally processed and patio dried. The roast is an expressive light (Agtron #76.6) via a Loring S70 Peregrine. Flavor notes include green apple, jasmine, pineapple, and cacao, delivering a bright acidity and silky, tea-like texture.
