Jairo Arcila - Dragon Fruit is a specialty coffee from Armenia, Quindio, Colombia, produced by the Arcila family at Finca Santa Monica. This Castillo variety undergoes a co-fermentation process involving dry anaerobic fermentation with added dried dragon fruit powder, enhancing its fruity profile. The coffee displays flavors such as lychee, pineapple, and cherry candy, with notable tart acidity. It is harvested at 1500 meters elevation.
