This coffee was grown by Jairo Arcila at Finca Santa Mónica in Quindío, Colombia. It is a Castillo variety processed via an experimental co-fermentation: cherries underwent a 48-hour dry anaerobic fermentation with wine yeast and fresh blackberries. Tasting notes include blackberry, hedgerow fruit, purple starburst, and rhubarb, with pronounced aromatic complexity.
