A single origin coffee from Risaralda, Colombia, produced by Juan D Gallego (Don Gallego / Agroindustrias Gallego SAS) in Belén de Umbría. The Castillo Rosario variety is grown at 1810–1940 masl and processed using anaerobic natural fermentation: cherries are fermented in tanks for 72 hours at 19°C, with natural juice recirculated every 24 hours, then sun-dried to 10–11.4% moisture. Roasted light/medium for espresso, this cup is sweet, full-bodied, and fruit-forward with notes of jackfruit, bubble gum, banana, blueberry, and pineapple. Cup score: 87.25.
