A fruit-forward single origin from Risaralda, Colombia, produced by Juan D Gallego (Don Gallego / Agroindustrias Gallego SAS) in Belén de Umbría at 1810–1940 masl. The Castillo Rosario variety is processed using the Anaerobic Natural method, involving anaerobic fermentation for 18 hours followed by 62 hours in a stainless steel bioreactor. The result is a bright, sparkling cup with pronounced berry and candied citrus notes — specifically Raspberry, Tutti Frutti, Orange Soda, and Strawberry. Cup score: 87.00. Part of the Limited Edition Soda Series.
