The roasting philosophy sits in a deliberate middle ground between Nordic light and traditional French styles, with beans sourced through direct trade from Ethiopia, Kenya, Colombia, Guatemala, El Salvador, and Rwanda. The cafe at 43 Rue de Montpensier has a Parisian meets Melbourne aesthetic with marble, tile, and plants, and it doubles as one of the city's best known brunch destinations with Australian staples like avocado toast, granola bowls, and poached eggs alongside exceptional flat whites. Over ten years in, Partisan has become part of the Paris specialty establishment, known for consistent quality, multilingual service, and a welcoming atmosphere that draws both expats and locals.
