About This Coffee

This Yellow Bourbon coffee from Colima, Mexico is grown at 1680 meters altitude in the Cofradía de Suchitlán and El Naranjal regions. The coffee is cultivated on volcanic soils from the Volcán de Colima and processed using a 160-hour Carbonic Maceration Natural method, followed by slow, controlled drying. The processing is handled by Mar Mena for the Arábica Colimota project. The coffee features a creamy texture with tropical fruit, ripe peach, strawberry, raspberry, light wine-like acidity, and cacao notes in the finish. The lactose-dominant microorganisms naturally present in this terroir create a fruit-forward expression with deep sweetness and complexity.
